Salad, Hummus, Brownies

Lonie's Salad Dressing

3/4 c. Vege. Oil
1/4 c. Lemon jc.
6 tsp minced garlic
Salt & pepper to taste

Make a salad with whatever you want and put lots of grated parmesan cheese in the salad (not
Salad dressing). Right before serving and dressing and toss. Dressing makes enough for a big bowl.


Hummus

3 cans chick peas ( drain 2 cans and save a few chick peas to garnish with)
1/2 c. Lemon jc.
1/4 c. Olive oil
1/4 c. Tahini (drug emporium sells it, not sure where to get it in town)
2 garlic cloves
2 tsp minced garlic
2 tsp salt
Black pepper
Crushed red pepper
Paprika, optional
Put all ingredients in food processor and leave it til it's creamy.
Spread on large plate-like serving dish and put a little circle of olive oil in center with a few chick peas on top of oil. You can sprinkle paprika over hummus if you want.
You can also serve in bowl with optional oil and chick peas in center.
You can serve with whole wheat pita bread. Cut pita bread in eight triangles.
The hummus is enough for about 2 packs of pita breads.


Brownie Sheet Cake

Cook a box of chocolate cake mix (any kind) according to package, but put in a jellyroll pan.
It's like a cookie sheet but has 1-2 inch sides.
Let cake cool a few mins before pouring on icing.

Icing

In saucepan over low fire add:
1 stick margarine
4 T. Cocoa
6 T. Buttermilk ( mix 1/2 reg. milk and 1 T. White vinegar then measure from there)
1 tsp. vanilla
1 box (1lb.) powered sugar
1 cup nut, optional
Mix well with a mixer so powered sugar isn't too lumpy. Pour over cake after it cooled for about 5 mins. or so.

    I was told for the brownies to use Pilsbury cake mix with pudding and to also add 1tsp almond extract and 1/4 tsp cinnamon.
