Chick's Chicken Salad

2 cups cube chicken or turkey (broasted chicken is great)
1 cup celery, chopped finely
1/2 c. chopped pecans
Mix together and add mayo, salt and pepper
Serve on bread or crossaints.

(Optional: if you need to stretch it, you can add a few boiled eggs that are chopped fine, but this is not part of Chick's recipe.)

Chick's Chicken Curry

Boil 6 chicken breast or whole chicken (or use leftover chicken or turkey) with salt, pepper, Tony's, rosemary, onion, celery and chop in bite size pieces.                             
3 sticks margarine or butter
1 1/2 cups flour
3 cups hot water with 3 tsp chicken base or bouillon
5 1/2 cups chicken broth
1 apple
8 teaspoons curry powder

Melt margarine then add flour and stir and cook for about 5 minutes. Add curry and stir. Add boullion and broth. Cut and core apple, add to curry to soften taste. Cook for about one hour.
Add chicken or turkey and cook 1/2 hour longer. Remove the apple then serve over rice. Have these condiments to serve
with curry: raisins, coconut, egg whites (chopped), egg yoke (grated), bacon pieces, nuts, chutney, etc.

Dirt Cake

1 1/2 pks. Oreos (not double stuff)
1/2 stick margarine or butter
8oz. Cream cheese
1 1/2 cup powered sugar
1- 12 oz. cool whip
2  1/2 cup milk
2  - 3 1/2 oz. vanilla pudding

Make in oblong pan or plant pot.
1- Divide cookies in 3 parts and crush them until fine like dirt.
2-Cream together margarine, cream cheese, and powered sugar.
3-Blend together pudding and milk then add cool whip.
4-Combine two white mixtures.
5-Layer: 1/3 cookie crumbe, 1/2 white mixture, 1/3 cookie crumbs, 1/2 white mixture, 
                1/3 cookie crumbs.
Optional: you can add gummy worms.

Lasagna


Mix 1 egg in ricotta or cottage cheese
You can use uncooked noodles, but don't overlap noodles
Parmesan cheese
2 bags of shredded Italian or mozzarella cheese

Brown:
3 lbs. ground meat
1 onion
1 bell pepper
Garlic
Then add:
2- 15oz. Cans of tomato sauce
1/2 can Mild rotel tomatoes
Tony's, salt, basil, Italian seasoning,2T. Sugar,
Rosemary & 1/2 tsp fennel (optional)

Cook for 1 hour covered.
Layer:
Put a little Meat sauce on bottom of pan, noodles (uncooked), meat sauce, 1/2 of ricotta or cottage cheese, mozzerella or Italian cheese mix, noodles, meat sauce, 1/2 ricotta or cottage cheese, Italian or mozzarella, Noodles, meat sauce, parmesean cheese.
Wrap in foil and bake for 1 hr. at 350.  Uncover, sprinkle mozzerella cheese on top and bake 10-15 min. Let stand for 10 min.

For a healthier version, you can substitute the noodles with peeled, sliced eggplant or sliced zucchini, but not the lasagna will be juicer because there are no noodles to absorb the sauce.

Caesar Salad

1 large, chopped romaine lettuce
Salt & pepper
Crouton's
Parmesean Cheese ( kind of a lot)
Mozzarella cheese, optional
Ken's Creamy Caesar  Salad Dressing to taste

Put all ingredients in bowl and mix right before serving.
One large bag from Sam's (2 lbs.) feeds about 15 people.
You can add chicken if you'd like.
