Fettuccine & Lonie's Pasta

1 lb crawfish or Shrimp
3/4. Lb. velvetta cheese
1 stick margarine
1 onion
1 bell pepper
1 Stalk celery
2 pods garlic
10-12 egg noodles
1 sm. can mushroom
1/4 c. Flour
12 oz. milk or half & half
Boil noodles, but not until completely done. Sauté all veges in margarine. Add flour & cook for 5 min. Add milk & cheese, let melt. Add seafood and seasoning. Cook for 5-10 min. Mix cooked noodles with sauce. Put in baking pan and grate cheese on top. Bake @ 350 for 20-30 min.

Lonie's Pasta (for about 30-35 people)

3 lb. Velvetta cheese
3-6 lbs. chicken breast, cut in bite size pieces or seafood ( bake or pan fry chicken or seafood)
4 lbs. Bowtie noodles (make sure box says 1 lb, not 12 oz. or adjust accordingly)- cook
2 cans rotel
1/2 gallon milk
1/2 pack green onion,cut

In large, thick pot on low fire add cheese, rotel and milk. Stir so cheese doesn't burn on bottom. When all melted and mixed add chicken or seafood and green onions. Right before serving mix all the cooked noodles in pot with sauce and serve. Yummy!
You can serve with salad and bread and everyone will love it.
Double to serve 75 people. That is what we do to serve at Chi Alpha.


Salad, Hummus, Brownies

Lonie's Salad Dressing

3/4 c. Vege. Oil
1/4 c. Lemon jc.
6 tsp minced garlic
Salt & pepper to taste

Make a salad with whatever you want and put lots of grated parmesan cheese in the salad (not
Salad dressing). Right before serving and dressing and toss. Dressing makes enough for a big bowl.


Hummus

3 cans chick peas ( drain 2 cans and save a few chick peas to garnish with)
1/2 c. Lemon jc.
1/4 c. Olive oil
1/4 c. Tahini (drug emporium sells it, not sure where to get it in town)
2 garlic cloves
2 tsp minced garlic
2 tsp salt
Black pepper
Crushed red pepper
Paprika, optional
Put all ingredients in food processor and leave it til it's creamy.
Spread on large plate-like serving dish and put a little circle of olive oil in center with a few chick peas on top of oil. You can sprinkle paprika over hummus if you want.
You can also serve in bowl with optional oil and chick peas in center.
You can serve with whole wheat pita bread. Cut pita bread in eight triangles.
The hummus is enough for about 2 packs of pita breads.


Brownie Sheet Cake

Cook a box of chocolate cake mix (any kind) according to package, but put in a jellyroll pan.
It's like a cookie sheet but has 1-2 inch sides.
Let cake cool a few mins before pouring on icing.

Icing

In saucepan over low fire add:
1 stick margarine
4 T. Cocoa
6 T. Buttermilk ( mix 1/2 reg. milk and 1 T. White vinegar then measure from there)
1 tsp. vanilla
1 box (1lb.) powered sugar
1 cup nut, optional
Mix well with a mixer so powered sugar isn't too lumpy. Pour over cake after it cooled for about 5 mins. or so.

Layered Salad, Easy Monkey Bread, Banana Bread

I'm writing some recipes that are very good:

8 layer salad
Layer 1-3 : two different lettuce and spinach ( clean and torn in small pieces)
Layer 4: sprinkle peas (frozen peas that have been thawed on paper towels)
Layer 5: green onions (one bunch, clean and chopped
Layer 6: six boiled eggs ( grated)
Layer 7: bacon (cut in small pieces and cook)
Layer 8: dressing (2 packs of original hidden valley ranch mix mixed with 2 cups sour cream and
2 cups mayo. Spread to all edges)
This makes a nice size pan. Make sure your pan is at least 2 in. deep.

Sticky Bun Breakfast Ring

2 small tubes biscuits
3T. Margarine or butter, melted
1/2 c. Syrup
1/3 c. Packed brown sugar
1/2 tsp. cinnamon
1/4 c. Chopped nuts, optional

Spray bundt pan with non stick spray. Combine butter and syrup in small bowl. Combine brown
sugar, cinnamon, & nuts in another bowl. Place half of the syrup mixture in bottom of pan then sprinkle 1/2 of sugar mixture on top. Lay the biscuits in pan angled and overlapping edges ( closely together) to form a ring. Top with remaining syrup and sugar mixtures. Bake @ 375 for about 15-20 min. until until golden brown. Cool for one minute then invert on plate. Yummy!


Banana Bread

1/2 c butter, soften
1c. White sugar
2eggs
1tsp vanilla
1/2 tsp lemon jc.
Mix ingredients together
In another bowl mix:
1 3/4 c. Flour ( sift in bowl by whisking flour with a fork)
1 tsp baking soda
1 tsp baking flour
1/2 tsp salt
1/4 tsp cinnamon
1/4 tsp ground clove ( optional)
And both mixtures together and mix then fold in:
2-3 mashed very ripe bananas
1/2 c. Nuts
1/2 c. Sour cream
Mix together, pour in greased loaf pan and bake @ 350 for 1hour
